20+ year dream...

Supporting a dream makes it become... A reality!

My daughter and I were diagnosed with Celiac Disease in 2000. After dealing with many symptoms that caused us to visit the ER frequently and watching my 8-year-old daughter be hooked up to IVs from the age of 6 years old…

  We finally figured out what was wrong, at 8 years old my daughter was diagnosed with Celiac Disease. And my diagnosis followed a few weeks later.

  Taking gluten out of our diet gave my daughter a better quality of life and stopped her from getting sick. But she was an 8-year-old girl who was a bit of a picky eater.

  In 2000, when we were first diagnosed… there weren’t a bunch of gluten-free products on the market. What was available was considered a special order, was very expensive, and was not all that great when it came to taste and texture.

·       Celiac disease is a chronic digestive and immune disorder that damages the small intestine

·       Experts estimate that about 2 million people in the United States have celiac disease

·       Only about 1 percent of people around the world have celiac disease

 

With such a small percentage of people being affected by this disease around the world. Companies are not in a big rush to put out more truly gluten-free and celiac-safe food. Much less ones that are good…

Did you know that most store-bought “Gluten-Free” foods are not actually celiac-safe?

Most of them have a small Allergen statement, such as “processed in a facility that also processes foods containing wheat or gluten” or “may contain wheat”. There are some people with celiac disease that even the smallest trace of gluten can cause a reaction. So, this makes things difficult, to say the least…

  I knew I had an opportunity to create something great and fulfill a need that companies weren’t filling. I always wanted to be a baker, but now I had a reason to pursue that dream. I just had to figure out ways to allow us to enjoy food that normally wasn’t available to those who suffer from celiac disease. And to make sure they were 100% celiac-safe…

  Figuring out how to bake Gluten-Free is not an easy task. Converting normal recipes can be difficult. So, I started experimenting with recipes and after many years… and many failed attempts my family faithfully suffered through and tried each one… I think I have finally perfected my recipes. I use my own blend of flour that I have found works best for baking. And I’m always tweaking them and trying new things, but I know what I’m doing now and I'm confident in my abilities and recipes.

So, after gaining confidence in my gluten-free baking… in 2017, I decided to prove to myself and my family that I had a good concept. I opened my own fully licensed cottage food home bakery and started doing vendor events each weekend to sell my baked goods. And people loved them! The feedback I got from my customers was and still is great. I even have return customers. This was such an exciting realization for me.

  With my daughter's help, I branched out to social media and even created a website. Over the last 5 years, I’ve worked hard to achieve my dream, reach more people, and create a solid customer base. My goal to help people enjoy the things they typically miss out on once diagnosed with celiac disease was realized.

  Now, I want to expand even more… I’m looking to open up more opportunities and reach more people! I’m working towards opening a physical location so I can sell my baked goods in my bakery. I created a business plan and did all the research to make sure this was achievable! Now, I’m working towards getting the funding I need to proceed in opening a storefront.
